From bamboo grilling, fermentation, slow cooking to caramelise, pit roasting, manual grinding, and skewer grilling, Kaum uses traditional cooking techniques to demonstrate the true breadth of Indonesian food.As well as enjoying new flavours, Kaum’s menu allows for learning about the geographic origins of the dishes, introducing lesser-known regions of Indonesia such as Aceh, Sulawesi and Maluku. To pair with the punchy flavours of the food, the drinks list at Kaum offers cocktails that experiment with fruit and spice-infused local spirits. A special line of Kaum cocktails have also been rested in handmade ceramic claypots for a month to preserve flavours and elevate smoothness.
